I'm coming to the conclusion that the boost & throttle mapping is responsible for the low rpm & speed sluggishness with these cars. Not sure what the engineers were trying to achieve by not opening the boost in the circa 15-20% throttle which for the average urban driving scenario is the main throttle range.

Therefore giving the vehicle an on/off switch feel which is not ideal.

That is very personal liking.
I think everything is OK with your car.

Yes, when you switch from other car that has much more aggressive throttle mapping, 1.6T may seem sluggish.
I personally liked it a lot. It allows me for better control of the power.

I never asked... but how far do you push the throttle when in low gears?
Did you floor it?
Have you ever tried the manual shifting option? And start from a dead stop, push the pedal to the floor, and quickly shift gears before rpm reaches 3.5k?
I dare you do it. And then tell me if you like it.
